Who will this class benefit?

Cooking With Whole Foods is an educational class that re-orients your thinking of what and how to eat, dissolving myths we’ve learned about food through the culture. If you are interested in living a healthier and more vibrant life through cooking with nutrient-dense foods this class is for you!  Classes are open for every dietary type whether you are an omnivore or vegan. Gluten, dairy and allergy sensitive individuals welcome.

In this class you will learn:

  • An overview of what healthy eating means for you and why individualized diets are best. 
  • How to set up your whole foods kitchen.
  • How to cook nutritionally with delicious recipes using whole grains, legumes, nuts, seeds, protein, fats and seaweeds.  (I will create breakfast, lunch and dinner as demonstrations that we will sample during the class.)
  • The best ways to cook or prepare vegetables for optimal nutritional content. 
  • Understanding salt, what kind to use and how much. 
  • Which oils are best to use for cooking and sautéing and which ones not to heat. 
  • Good fats vs. harmful fat  (what types of fats you need & how much.) 
  • Essential Fatty Acids (EFA’s): what they are and where to find them (even if you are on a vegan or raw food diet.)
  • When and why to food combine.
  • The best types of sugars and sweeteners to use (and not to use.)
  • Important information about mainstream fad diets.
